Summer Update and Surprise Brownies

Hello all.... I'm back. Took a nice long break and vacation (more stories to come on that soon). But what I realized is that I was feeling stressed and pressure about keeping this 'every other day' posting schedule... So what I am gonna do instead is keep a 'carefree' summer schedule with some posts here and there... I want to continue sharing the great food, adventures, good times and love in my life so stay tuned for the 'relaxed' schedule.

...And now, here's the Surprise Brownies...





... they are made with BLACK BEANS....are you thinking, YUK!!!!! Well, think again... they are awesome and you don't even know there are beans in there. Melanie and I who don't like beans (and our guests who were fooled, LOL) loved them!

 So here are the key stars of the show: Black beans, cocoa powder and vanilla.

Here's the recipe:




Black Bean Brownies 

Ingredients

    1 can black beans (drained and rinsed)
    3 eggs
    1/4 c cocoa powder
    1 pinch salt
    1 tsp vanilla extract
    3/4 c white sugar
    3 Tbsp of vegetable oil
    optional: chopped nuts and/or chocolate chips
 




  Put all ingredients in a blender or food processor.


Blend thoroughly.
 
 Pour into a greased 9x9 baking dish.

  If desired, sprinkle top with chopped nuts of chocolate chips.

Bake at 350 degrees for 30 minutes, or until a toothpick comes out clean. Let cool, slice and serve.

Can you believe that this tiny little black bean can be disguised into a chocolaty decadent brownie? Try it, you'll be amazed!
