Soupy Sundays- Beef and Broccoli Soup

It's been a while, so I thought I would titillate you with some soup photos again. This was such an easy crockpot soup recipe. I just love winter crockpot soup, it just lets you get along in your day.

It's called broccoli soup, but there are tons of vegetables in there.



Crock Pot Beef Broccoli Soup

Ingredients
o             1 1/2 lbs lean ground beef
o             2 garlic cloves, minced
o             3 cups fresh broccoli, chopped
o             1 cup chopped fresh mushrooms
o             1/2 cup celery, chopped
o             1 1/2 cups carrots, sliced
o             1/4 cup fresh bell peppers, chopped ( any color will work)
o             4 cups vegetable juice ( V8 type)
o             1 cup water
o             1 teaspoon instant chicken bouillon
o             1/4-1/2 teaspoon salt ( depends on taste)
o             1/4 teaspoon pepper
o             1/4 teaspoon thyme leaves
o             1/4 teaspoon oregano

Directions
1.            Brown ground beef and garlic, crumbling very well.
2.            Drain off fat and add to crock pot.
3.            Add remaining ingredients to crock pot and give it a good stir.
4.            Cook on low 8-10 hours.
5.            Leftovers freeze well.
