Ham and Egg Cups

After the big Christmas holiday, you probably need a simple little recipe that's nutritious and delicious... so here's a little idea I like to call Ham and Egg Cups!

How pretty and impressive right?

All you need is some thinly sliced deli meat- I think ham is the best choice, but you could use turkey, pastrami, etc.... It's brilliant, because all you need is a muffin pan that you lightly spray, then put 2 slices of meat into.

Get your eggs ready and all your add-on's: cheese, broccoli, tomato was what I had on hand. You could choose peppers, mushrooms, onions, zucchini, try some feta and oregano for a little Greek flare!

Here's what you do... crack an egg into the ham cup, add your toppings and bake!

Here's the little recipe card I picked up grocery shopping in my travels. Obviously modified to use real eggs of course. But this is good guide for the time and temperature: 400 degrees for 13-14 minutes.

Easter- Fun with Food

My mother made a beautiful Easter Dinner... I just had to share some of the Glamour shots with you!

Delicious Maple-Glazed Ham... so much porc love!

OMG, the loveliest sorbets in natural fruit shells. What a cool desert!

Look at this Coconut shell with Coconut sorbet in it. My Dad could not believe it was a real coconut shell, my husband couldn't believe the lemon shell was real either, he took a bite from it... what is it with men and frozen fruit shells?

Check out the nutrition details... ok, the lemon shell is the least caloric choice... the coconut, not so much!

Look at the nice Easter Treats my sweet Mama gave me... an EOS lip balm, love those smooth eggs, those dark chocolate covered pretzels and the prettiest Easter card with the coolest Easter flower pots that look like swimming head caps from the 40's.

Sexy Croque Mounsieur

You know, with the release of everything sexy lately... (Magic Mike, 50 Shades of Grey), I thought I would get your attention with this title.
But you know, doesn't this bread look sexy with those brown curves? It's one of our new favourites. It's a marble rye bread, and it's cut real thin so you can make some nice, delicious sandwiches. This time was a Croque Monsieur. I just take some light cheddar cheese and some ham and but a little butter on the outside and grill it in the pan. It has a pretentious name, but it's real simple and kid friendly.

Hawaiian Burgers- It's a Luau in your mouth

You know we love our hamburgers on the grill here at the Hallidays- but I was bored of the same old thing. So one night, fresh pineapple in sight, I said to Brent, why don't you grill some pineapple and some ham and we can have Hawaiian Burgers! Well indeed, it was a Luau in my mounth. As per Wikipedia- A luau (in Hawaiian, lū‘au) is a traditional Hawaiian party or feast that is usually accompanied by entertainment.
Well it was a party... served on a 'flat whole grain bun' and a light Ceasar Salad and homemade oven fries. As for the 'entertainement portion'....
... I think it was watching Brent trying not to lose those pineapple rings through the grill and trying to get the perfect grill marks!
Here we have the little mis-en-place of Hawaiianess... and the big bowl of salad too!
And for deserts... Pineapple Paradise Fruit Salad!
