Quick Weeknight Dinner- Moo Shu Chicken Wrap



Moo Shu Chicken Wraps (adapted from LowFatLifestyle.com)
This is such a great weeknight meal. I used a whole rotiserrie chicken, a whole bag of coleslaw and  added half a bag of shredded carrots too. It was so tasty, Melanie loved it and the leftovers.




Servings: 4         
• Vegetable cooking oil spray
• 1 - 8 ounce bag coleslaw mix ( I used a President's Choice 340g bag)
• 2 cups cooked bonless skinless chicken breasts, shredded
• 2 tablespoons hoisin sauce ( I used PC Blue Menu Light MEMORIES OF Szechwan Spicy Peanut Satay Sauce instead)
• 1 tablespoon light soy sauce
• 4 10-inch fat-free flour tortillas (we used 2 small tortillas each instead, and of course, whole wheat)
Heat oil in a nonstick skillet. Add coleslaw mix and cook briefly, 2 to 3 minutes, just until slightly softened but still crunchy. Add chicken and cook another minute or two, to heat through. Stir in hoisin sauce and soy sauce. Remove from heat.
Place tortillas on a plate and cover with plastic wrap. Microwave on high (100% power) for 45 to 60 seconds, until softened. Place 1/4 of the chicken and cabbage mixture on a tortilla. Fold each end over, then roll to make an enclosed wrap.
Nutritional Information: Per Serving: 171 Calories; 2g Fat (12.4% calories from fat); trace Saturated Fat; 8g Protein; 30g Carbohydrate; 13g Dietary Fiber; 9mg Cholesterol; 544mg Sodium.
