Pear Blueberry Crisp
This recipe is an adaptation of many 'crisp' recipes. Made a with a little less sugar, a little less butter and whole wheat flour. I used the fruits I had in my kitchen to make a delicious treat.
Ingredients:
Filling:
4 pears, peeled and sliced
2 cups of fresh bluberries
1 Tbsp cornstarch
2 tsp lemon zest
1 tsp cinnamon
1/2 tsp ground ginger
Topping:
1 cup quick cooking rolled oats
1/2 cup whole wheat flour
1/3 cup brown sugar
1/2 tsp cinnamon
3 Tbsp melted butter
1/4 cup chopped walnuts
Directions:
Preheat oven to 375 F. Spray a 9 x 13 baking dish with cooking spray. place cut fruit in the bottom and sprinkle with sugar, cornstarch, cinnamon, ginger and lemon zest. Mix well and set aside.
Combine oats, flour sugar and cinnamon in a bowl, add melted butter and mix it all up. Sprinkle the topping over the fruits and cover evenly.
Bake for about 30 minutes, until the fruit is cooked through.
